Cooking Preparation of the Recipe:

1 cn (16 oz) black beans,
Rinsed, drained
4 ea Ounces monterey jack cheese
Cut into 1/4" cube
1 cn (8 oz) whole kernel
Corn, drained*
3/4 c Sliced green onions
With tops
3/4 c Thinly sliced celery
1 sm Red bell pepper, diced
3/4 c Pace Picante Sauce
2 tb Olive oil
2 tb Lemon juice
1 ts Ground cumin
1 ea Clove garlic, minced

Combine beans, cheese, corn, green onions, celery and red pepper in
large bowl. Combine picante sauce, oil, lemon juice, cumin and
garlic; mix well. Toss with bean mixture. Chill, if desired. Serve
with additional picante sauce.

* 1 cup fresh corn, cooked, may be substituted.
