Cut in even-sized pieces 1 c Dry white wine
Abt 2-1/2" x 2-1/2" x 1"

---------------------------CRUST--------------------------------
1 c Lightly toasted 1 ts Black pepper
Plain dried bread crumbs 1 ts Grated lemon zest
1 tb Thyme leaves 1/4 c Extra-virgin olive oil

--------------------------POTATOES-------------------------------
4 lg Yukon Gold potatoes 6 oz Brie, with rind
(abt 2 1/2 lb), peeled Cut in 1/2" cubes
Cut in 3/4" dice Salt and pepper to taste

------------------------VINAIGRETTE-----------------------------
2 c Mint leaves Peeled and seeded
Loosely packed 1 tb Minced garlic
1 c Fish stock or clam juice Juice of 2 limes
1/4 c Toasted sliced almonds Salt and pepper to taste
1 Jalape¤o chile, roasted
