2 c All-purpose flour 1 ts Ground nutmeg
2/3 c Sugar 1 ts Vanilla extract
1 tb Baking powder 2 c Fresh blueberries -- or
1/2 ts Salt Frozen
2 ea Eggs Additional butter or
1 c Milk Margarine, melted
1/3 c Butter or margarine -- Additional sugar
Melted
In a mixing bowl, combine flour, sugar, baking powder and salt. In
another bowl, beat eggs. Blend in milk, butter, nutmeg and vanilla;
pour into dry ingredients and mix just until moistened. Fold in
blueberries. Fill greased or paper-lined muffin cups two-thirds full.
Bake at 375 deg. for 20-25 minutes. Brush tops with melted butter and
sprinlcle with sugar (*lf using frozen blueberries, rinse and pat dry
before adding to batter.) Yield: 1 dozen.
