1 lb Carrots in 1/4-1/2" slices -lightly
2 tb Water 1 t Grated lemon peel
5 t Extra virgin olive oil 1/4 t Lemon-pepper seasoning salt
1/4 c Chopped walnuts, toasted
Cook carrots, with water, until tender (about 5 minutes in a
microwave or 10-15 minutes in a covered pan over medium heat).
Combine olive oil, nuts, lemon peel and salt in a bowl. Add carrots.
Serve warm.
Per serving: 147 calories, 2 grams protein, 13 grams carbohydrates, 4
grams fiber, 11 grams fat (1.3 saturated), 66 milligrams sodium.
