Coconut chicken with fresh fruit

Cooking Preparation of the Recipe:

8 ea Boneless skinless chicken
-breast halves
2 tb Butter or margarine
1 tb Fresh ginger root --
-chopped
Salt -- to taste
1/3 c Flaked coconut, toasted
-divided
1 c Whipping cream
3 ea Bananas -- quartered
1 lg Papaya, peeled, seeded
-sliced

Melt butter in large skillet over medium-high heat; add chicken and
cook 4 minutes on each side or until lightly browned. Sprinkle with
ginger, salt, and 3 T coconut; add whipping cream. Cover and cook
over low heat 10 minutes. Arrange chicken, bananas and papaya on a
large platter. Pour warm sauce over chicken and sprinkle with
remaining coconut. Garnish with lime wedges and Italian parsley.
