1/4 c Shallots-chopped
8 Pheasant breasts
2 Garlic cloves-minced
1/2 ts Coriander-ground
1 tb Soy sauce
2 c Coconut cream
2 ts Lemon rind
1 ts Sugar
2 tb Butter
1/2 c Peanuts-chopped
Pound together the shallots, garlic, chili peppers, peanuts,
coriander, lemon rind, sugar and salt. Sip the pheasant in the
mixture. Melt the butter in a large and deep skillet; saute the
cream, soy sauce and any remaining spice mixture. Cover and cook over
low heat twenty minutes, or until pheasant is tender. Season to taste.
