2 c Fresh-cut sweet corn -- 3 to 1/2 ts Salt -- optional
4 Ears 1/4 ts Ground cumin
2 tb Butter or margarlne 1 lg Tomato -- chopped/seeded
1/4 c Onion -- chopped 2 tb Sugar -- or sugar
1/4 c Green pepper -- chopped Substitute
Combine the first six ingredients in a medium saucepan; cook and stir
over medium heat until butter is melted. Cover and cook over low heat
for 10 minutes. Stir in tomato and sugar or sugar substitute; cook,
covered, 5 minutes longer. Yield: 5 servings. Diabetic Exchanges: One
2/3-cup serving (prepared with light margarine and suqar substitute
and without added salt) equals 1 starch, 1 fat; also, 96 calories, 71
mg sodium, 0 cholesterol, 14 gm carbohydrate, 2 gm protein, 4 gm fat
