Cooking Preparation of the Recipe:

2 1/2 tb Butter
3 tb Flour
1 1/2 c Milk -- heated to boiling
1/4 c Horseradish
2 tb Dijon mustard
1/2 ts White wine vinegar
2 lg Egg yolks
1/3 c Heavy cream
Salt
Ground pepper

Melt butter in saucepan; whisk in flour and cook, stirring, 1 minute;
pour in milk, bring to a boil and cook, stirring, 2 minutes; add
horseradish, mustard and vinegar; whisk in egg yolks and cook over
medium-low heat until thickened; DO NOT BOIL; pour in cream; season
