6 tb Olive oil 1 1/3 c Cold water
1 c Onion, chopped 2/3 c Dry white wine
2 lg Garlic cloves, chopped 2 lb Fish fillets, mixed sea bass
2/3 c Fresh parsley, chopped -orange roughy, cod, snapper
1 c Tomatoes, chopped (1 medium)
Heat oil in a large pot or dutch oven over med-high heat. Add chopped
onion and garlic and saute for 4 minutes. Add parsley and stir for 2
minutes. Add tomato and cook for another 2 minutes. Add 1 1/3 cups
water and the wine and simmer 10 minutes to blend flavors. Add fish
fillets cut into 2" pieces, simmer until fish is cooked through,
about 10 minutes. Season to taste with salt pepper.
