1 c Beef suet 2 ts Orange rind, chopped
1 c Sugar 2 ts Lemon rind, chopped
3 Egg yolks 1 ts Nutmeg
1 c Milk 1 ts Ginger
3 tb Brandy or dark rum 1/4 ts Cloves
1 c Dates 1 1/2 c Dry bread crumbs
1 c Apples;peeled sliced 2 ts Baking powder
1 c Walnuts 3 Egg whites
Mince the suet finely. Add the sugar and mix. Beat in the egg yolks.
Stir in the milk and brandy/rum. Run the dates and apples through a
grinder and add. Crush the walnuts on a flat surface with a bread
roller and add together with the minced rind and spices. Add the
crumbs and baking powder and mix. Whip the egg whites until stiff and
fold in. Pour the batter into a greased mold, no more than 2/3 full
