1/4 c Chopped onion Breast half -- cut into
2 ea Garlic cloves -- minced Strips
1/4 c Lemon juice 1/2 c Chicken broth
2 tb Soy sauce 1/2 c Uncooked instant rice
1 tb Honey 1 tb Fresh parsley -- chopped
2 ts Ground ginger 1/2 ts Orange peel -- grated
1 ea Boneless skinless chicken
In a small bowl, combine onion, garlic, lemon juice, soy sauce, honey
and ginger. Add chicken; cover and refrigerate for at least 1 hour.
In a small saucepan, bring chicken broth to a boil. Remove from the
heat; stir in rice, parsley and orange peel. Cover and let stand for
5 minutes. Meanwhile, cook the chicken and marinade in a hot skillet
until no longer pink. Serve over rice. Yield: 1 serving
