Cooking Preparation of the Recipe:

1 1/2 c Leftover mashed potatoes Little pepper
1 Egg Flour
1 c Cooked ham, chopped Bacon fat or lard
1 tb Onion

Mix together potatoes and egg with a fork. Add ham, onion and pepper.
Shape into flat patties. Dip in a little four and fry in bacon fat or
lard. Serve hot. Many of the recipes in this collection did not
contain amounts or oven temperatures. I have typed them in as they
appear in the book, typos and all.
