Cooking Preparation of the Recipe:

2 lb Fresh or frozen halibut 3 tb Finely chopped pimento
-thawed 1/2 c Dry white wine
3/4 c Thinly sliced onion 2 tb White vinegar
1 cn 4 oz. sliced mushrooms, 1 ts Salt
-drained, or 1 c fresh slice 1/8 ts Fresh ground pepper
-mushrooms 2 tb Light margarine
3/4 c Chopped fresh or canned 1/4 c Minced parsley
-tomatoes Lemon wedges to garnish
1/4 c Chopped green pepper

1. Preheat oven to 350F. Prepare large baking dish with nonstick
spray. Cut fish into 6 even servings. Arrange onion in bottom of
baking pan.

2. Place fish ontop of onion. Combine the remaining ingredients except
margarine and lemon wedges. Spread ontop of fish. Dot with margarine.

3. Bake 25 - 30 minutes or until fish flakes easily with fork. Serve
with lemon wedges.

1 serving = 4 oz cooked fish.
