Cooking Preparation of the Recipe:
2 md Orange 6 md Peaches
1 ea Lemon 6 md Apple
1 pn Baking soda Sugar
6 md Pears
Grind unpeeled oranges and lemon in a food processor or grinder;
transfer to a large kettle. Add baking soda; simmer for 10 min. Peel
the remaining fruit; grind, then crush it. Add to orange mixture;
measure and return to kettle. Add sugar equal to the amount of fruit.
Boil until thick, about 30 min. Pour hot into hot jars, leaving 1/4
inch headspace. Adjust caps. Process for 20 min. in a boiling-water
bath. Yield: about 7 pints. Editor's Note: This recipe does not
require pectin.
