Cooking Preparation of the Recipe:

1 t Olive oil 2 cn Black beans, rinsed and
2 lg Cloves garlic, minced -drained well (15 oz. ea.)
1 lg Onion, finely chopped 1/4 c Tomato paste
1/2 t Minced jalapeno pepper 1 t Brown sugar
1 lg Green pepper, seeded and 1/4 t Allspice
-finely chopped OR 1/2 t Dried thyme
2 ea Poblano peppers, seeded and 1/2 t Dried basil
-finely chopped *Use black eye peas for
1/2 lb Baked ham, cut into cubes -Hopping John.

In a large saucepan, saute garlic and onion in the oil over medium
heat for a minute or so, then adding the hot and green peppers,
cooking for another minute. Add the remaining ingredients and simmer
for 10-15 minutes, adding a little water if it gets too thick. Serve
