1 Round steak; cut 3/4" thick 1/8 ts Thyme
1/4 c Flour, all-purpose 1 md Onion; sliced
2 ts Salt 1/2 c Celery; sliced
1/8 ts Pepper 16 oz Tomatoes; canned
3 tb Shortening
Cut steak int 4 pieces. Combine flour, salt, and pepper; Pound
seasoned flour into steaks. Brown in shortening. Pour off
drippings. Add thyme, onion, celery, and tomatoes. Cover tightly
and cook slowly for 1-1/2 to 2 hours or until meat is tender. Thicken
liquid for gravy, if desired.
