3 Whole chicken breasts 1/4 c Lemon juice
1 c Chunky peanut butter 1/4 c Brown sugar
1/3 c Chopped cilantro 1/2 c Soy sauce
1/2 c Chili sauce 8 Green onions, minced
1 T Salt 3 T Minced garlic
1/2 t Cayenne pepper 2 Sweet bell peppers, cubed
1/2 t Black pepper
1. Slice each breast into strips. 2. Soak wooden skewers in water for
at least 30 min. 3. In stainless steel or glass bowl, combine peanut
butter, cilantro, chili sauce, salt, cayenne, black pepper, lemon
juice, sugar, soy sauce, green onion and garlic. Add chicken breasts
and let marinate for 2 DAYS. 4. Preheat broiler or prepare a charcoal
fire. 5. On skewers, thread chicken strips like serpents with pepper
cubes interspersed. Broil or grill for 5-6 min, turning once.
Make sure the chicken breasts are fresh as they have to marinate for 2
days.
