1/2 c Finely chopped celery 2 c Cooked lobster meat (about
1/3 c Mayonnaise -2 1 3/4-lb lobsters)
1 tb Chopped fresh basil or 4 Frankfurter rolls
-parsley leaves 4 Lemon wedges (opt.)
1 tb Lemon juice Coleslaw (opt., separate
1/2 ts Ground black pepper -recipe)
1/4 ts Salt Yankee Fries (opt., separate
2 To 3 drops hot red-pepper -recipe)
-sauce (opt.)
1. In medium-size bowl, combine celery, mayonnaise, basil, lemon
juice, black pepper, salt, and red-pepper sauce, if desircd. Fold in
lobster until combined; cover and refrigerate at least 20 minutes.
2. To serve, split rolls and toast until golden. Divide lobster
mixture among rolls and serve with lemon wedges, Coleslaw, and Yankee
Fries, if desired.
