4 tb Butter; softened 1 lg Apple, tart; cored peeled
1/2 c Sugar 2/3 c Cheese, grated
2 lg Eggs 1/2 c Nuts, chopped
1 1/2 c Sugar, sifted 3/4 c Milk
1 ts Baking powder 1 Apple; sliced thin
1 ts Baking soda 1/4 c Butter; melted
1/4 ts Salt 2 tb Sugar; mixed with
3/4 c Rolled oats 1 tb Cinnamon
Yield: 12-15 muffins
Blend softened butter with sugar and add eggs, beating the mixture
thoroughly. Sift together flour, baking powder and soda, and salt,
then stir into butter-sugar mixture. Stir in oats. Chop the large
peeled apple into small bits and add to dough with cheese and nuts.
Gradually add milk, stirring lightly.
Fill buttered muffin tins 2/3 full. Brush apple slices with melted
butter and coat with sugar-cinnamon mixture, then top batter in each
muffin tin with 1 apple slice. Sprinkle remaining sugar-cinnamon
mixture evenly over top. Bake for about 25 minutes in a preheated
oven.
