2 tb Chicken stock 2 c Water
1 md Onion, diced 1 cn (16oz) black eyed peas,
1 lg Tomato, diced Rinsed and drained
1 c Uncooked brown rice
Saute onion in stock in a fry pan sprayed with pam. Add tomato and
cook another 5 minutes. Stir in rice and water. Cook until rice is
done. Add beans and heat through.
