1 lb Dried black-eyed peas 1/2 c Molasses
Rinsed and picked over 6 Sun-dried tomatoes
1 Onion(s), chopped (not oil-packed), chopped
1 cn (14oz) stewed 2 ts Salt or to taste
Tomatoes with juices Black pepper to taste
In a large bowl, cover the peas with cold water; let soak overnight.
Drain and rinse the peas; place in a large pot and add onions, stewed
tomatoes, molasses, sun-dried tomatoes, and 2 cups water. Bring to a
boil. Reduce heat to low, cover and simmer until the peas are very
tender and the sauce is thick, 2 1/2-3 hours. Add more water as
needed. Season with salt and pepper and serve.
