1/3 c Lowfat buttermilk 1/3 Carrot, finely grated
1/4 c Water 1/2 ts Orange or lemon extract
1/4 c Egg Beaters 1/2 c Whole wheat flour
2 tb Barley malt or brown rice 2/3 c Wheat bran
Syrup 2 tb Oat bran
2 tb Apple juice concentrate 1/2 ts Baking powder
2 tb Crushed pineapple, 1/2 ts Baking soda
Unsweetened 1/2 ts Ground cinnamon
Preheat oven to 375F. Spray 12 muffin cups with pam and set aside.
Combine wet ingredients in one bowl and dry in another. Combine.
Spoon into muffin cups. bake until golden brown and a toothpick
inserted in center comes out clean, about 20 minutes.
