4 lb Miniature Mexican tomatoes, 1/3 c Cucumber, minced
-- washed deseeded 1 ts Salt
12 ea Shallots, chopped 1/4 ts Black pepper
1/3 c Water 1/3 c Corn flour
Place tomatoes in a large saucepan, add the shallots water simmer
for 30 minutes, stirring gently on occasion.
Add the cucumbers salt pepper, simmer for 10 minutes, stirring,
until the tomatoes break up.
Quickly add the corn flour, 1 tablespoon at a time, stirring slowly.
Simmer for 5 minutes serve.
