1/4 c Margarine ; butter; softene 3 c Cornflakes; crushed (about
1 tb Chives; snipped or parsley 2 Parsley; snipped
1/8 ts Garlic powder 1/2 ts Paprika
6 Sm chicken breast; halves (a 1/4 c Buttermilk; milk
Mix margarine, chives and garlic powder; shape into rectangle, 3x2
inches. Cover and freeze until firm, about 30 minutes. Remove bones
and skin from chicken breast halves. Flatten each chicken breast half
to 1/4-inch thickness between plastic wrap or wax paper. Cut
margarine mixture crosswise into 6 pieces. Place 1 piece on center of
each chicken breast half. Fold long sides over margarine; fold ends
up and secure with wooden pick.Mix cornflakes, parsley and paprika.
Dip chicken into buttermilk; coat evenly with cornflake mixture.
Place chicken, seam sides down, in greased square pan, 9x9x2 inches.
Bake uncovered in 450 degree oven until chicken is done, about 35
minutes; remove wooden picks. I hope they enjoy this one. * Shirl *
