Cooking Preparation of the Recipe:

1 Eggplant
Dried oregeno
Mozzarella cheese
1 c Thick tomato pasta
Sliced thin
Sauce with spices
Salt
Grated parmesan chese
Dried Basil

Cut the eggplant crosswise into 3/8" slices. Then cut each slice into
quarters. Salt lightly on each side and set on paper towels for 20
minutes.Then pat dry pieces and arrange them on a PAMed cookie sheet.
Brush lightly with olive oil and sprinkle pieces Serve immediately.
