Cooking Preparation of the Recipe:

4 1 oz slices Italian bread 1 3/4 c Beef broth
1 lg Garlic clove, peel and split 1/2 ts Dried oregano
3/4 oz Parmesan cheese, grated 1/2 ts Dried basil
2 1/4 c Tomato juice

To prepare cheese croutons, dry out the bread in a 300 oven for 15
minutes. Rub each slice with garlic, sprinkle evenly with the
Parmesan, and run under the broiler to brown lightly. Keep warm. In a
medium saucepan, combine the tomato juice, broth, oregano, and basil,
heat to boiling. Simmer 5 minutes and top each portion with a cheese
crouton, if desired. 1 cup serving = 34 cal 1 g fat 1 crouton = 102
