1/2 Orange, unpeeled 1 1/2 c White sugar
2 tb Water 1/4 c Seedless raisins
2 c Coarsely chopped (unpeeled) 1 tb Lemon juice
-plums
Wash orange and cut into thin wedges; thinly slice, discarding any
seeds. In 8 cup measure, combine orange and water. Microwave,
uncoverd, on high for 2 minutes, or until rind is tender. Stir in
plums, sugar, raisins and lemon juice. Microwave, uncovered and
stirring every 3 minutes, on high, for 15-18 minutes, or until
thickened enough that a spoonful isn't runny after sitting on a plate
for a minute. Fill, seal and stor jar in refrigerator for up to 1
month. Makes 2 cups.
