Cooking Preparation of the Recipe:
MIX and SET ASIDE:
1 tbsp. yeast 1/4 c. warm water
1 tsp. honey
COMBINE:
2 1/2 c. whole wheat pastry flour 1 tsp. salt
(or 1/2 whole wheat 1/2 white flour) 1 tsp. vanilla
1/3 c. honey 1/2 tsp. coriander
1/4 tsp. cardamon 1 c. crushed pineapple and juice
1 1/2 c. mashed banana 3/4 c. nuts
ADD to yeast mixture. MIX well. SPOON into paper-lined or sprayed muffin tins until
2/3 full. BAKE at 350° for 30?35 minutes. YIELDS: 10 muffins.
