2 1/2 lb Chicken pieces [boneless
Preferred]
1/2 ts Salt
1/4 ts Pepper
3 tb Vegetable oil
1 cn (21oz) fruit pie filling
1/2 c White wine [dry]
1/2 c Lime juice
1/4 c Light brown sugar [packed]
1/4 ts Allspice
1/4 ts Nutmeg
1/4 ts Cloves [ground]
1) Rinse chicken and pat dry. Season with salt and pepper, then
brown in a skillet in the oil for 10 min. on each side, drain... 2)
Combine pie filling, wine, lime juice, brown sugar, and spices in a
bowl and mix well... 3) Arrange chicken in a microwave safe
casserole, and spoon the fruit sauce over it... Cover and nuke on low
setting for 20 min or `til the chicken is no longer pink and is fork
tender... 4) Serve over hot cooked noodles or rice... cf
