Cooking Preparation of the Recipe:

3/4 c Orange juice 1 ea Garlic clove, minced
1/4 c Red wine vinegar 1 ts Dijon
1 tb Parsley, minced Salt pepper
1 tb Chives, minced 1 lb Mesculun*

In a small bowl, whisk together the juice, vinegar, parsley, chives,
garlic, mustard, salt pepper. Set aside.

Arrange mesculun on individual salad plates. Just before serving,
re-whisk the vinaigrette dribble a tb or so on each serving.

*Mesculun is simply a generic name for an assortment of wild or baby
lettuces. If it's not available, mix several varieties together
ensuring that you include arugula (rocket) or watercress for a
characteristic spicy taste.
