2 lb Squid 1 tb Uncooked rice
1/2 c Olive oil 1 Very small tomato; minced
1/2 ts Salt 1 tb Olive oil
1 Clove garlic 1 Canned anchovy filet; choppe
~Peel squid and remove insides, keeping body whole. ~Cut off
tentacles and heads, remove eyes and put heads and tentacles through
meat chopper. ~Add parsley, salt, pepper, rice, tomato, anchovy and 1
Tablespoon oil and mix well. ~Stuff squid bodies with this mixture,
place in oiled baking dish, sprinkle with bread crumbs and pour oil
over all. ~Bake in hot oven 400 35 minutes. Slice and serve. serves 4
