1/2 lb Small dried red beans 2 1/2 c Water
1 Bay leaf 1 Ham hock (1/2 to 3/4 lb)
1 ts Salt 3 Ribs celery, chopped
1/2 ts Dried theyme 4 1/4 c Water
1/2 ts Dried basil -Louisiana hot sauce, if
1 ts Garlic powder -desired
1/2 ts Parsley flakes -Mix:
1/4 ts Cayenne pepper -Combine spices and pack in
2 c Long grain rice -an airtight container. Pack
-RICE: -beans and rice in separate
1 Recipe mix -airtight containers.
1 md Onion, minced
Red Beans and Rice: Soak the beans overnight in water to cover. Drain;
combine with remaining ingredients, except the rice and 4 1/2 cups
water. Bring to a boil; recuce heat, cover and simmer until beans are
tender, about 2 hours. Remove the ham hock, cool slightly. Remove m

minutes or until water is absorbed. Stir into beans. Serve with hot
