1 lg Onion Sliced
1 lg Red Pepper Chopped
2 Carrots Diced
2 md Zucchini Sliced
2 Celery Stalks Sliced
2 c Sliced Mushrooms
4 Tomatoes Peeled
Quartered
1/3 c Dried Beans or One
1 cn (15-Oz) Rinsed Drained
1/2 ts Paprika
Black Pepper,
Little Cumin
1. Heat the Oil in a Large Saucepan and add the Onion, Red Pepper,
Carrots, Zucchini and Celery. Cook Gently for 10 Min. Covered. add
the Mushrooms, Tomatoes, Kidney Beans, Paprika and Pepper To Taste.
2. Continue To Coook, Covered for a Further 10-15 Min. Check the
Seasoning and Serve.
