4 md Red Potatoes, quartered *1 1 tb Tamari soy sauce
1/2 c Cottage cheese, low fat 1/8 ts Pepper
3/4 c Yogurt, plain low-fat 1/2 c Celery, chopped
1/4 c Red wine vinegar 1/4 c Onion, chopped
3 ts Prepared mustard 1/2 c Green onion, chopped
3 ts Lemon juice
*1 This should be about 6 cups after cooking.
Cover potatoes with water in saucepan and bring to boil, cooking 25-35
minutes or until tender.
Place cottage cheese, yogurt, vinegar, mustard, lemon juice, Tamari
and pepper in food processor and mix until smooth.
Mix celery, onion, and green onion with potatoes. Pour dressing over
mixture and toss to coat. (while still warm)
