2 tb Walnuts
1 oz Unsweetened chocolate
1 c Sifted cake flour
3/4 c Unsweetened cocoa powder
1/2 ts Salt
3 lg Egg whites
2 lg Eggs
1 1/4 c Sugar
3/4 c Dark corn syrup
3/4 c Unsweetened applesauce,
- room temperature
1/4 c Vegetable oil
1 tb Pure vanilla extract
Preheat oven to 350 degrees. Coat a 9-by-13-inch baking pan with
non-stick cooking spray. Spread walnuts in a pie plate and bake for
8 to 10 minutes, or until fragrant. Let cool and chop coarsely. Melt
chocolate in a small bowl over hot, not boiling water or in a
microwave oven at medium (50 percent) power. Set aside. In a
medium-sized bowl, stir together flour, cocoa and salt. In a large
bowl, whisk together egg whites and eggs. Add sugar, corn syrup,
applesauce, oil and vanilla. Whisk in the chocolate. Add the flour
mixture to the egg mixture and stir with a wooden spoon until
blended. Pour into the prepared pan and sprinkle with walnuts. Bake
for 30 to 35 minutes, or until a cake tester inserted in the center
comes out clean. Let cool in the pan on a rack. Cut into squares.
