2 lb Red potatoes, med-sized 3 tb Olive oil
Thin-skinned; quartered Salt and pepper
3 sm Sweet potatoes or yams Sherry or cider vinegar
-- cut lengthwise in 1" stri -- optional
3 md Onions; quartered

Mix red potatoes, sweet potatoes, onions, and oil. Spread mixture
evenly on a large rimmed baking sheet. Bake in a 425 F oven until
vegetables are tender and browned (about 55 mins).
Transfer to a serving dish and season to taste with salt and pepper.
Sprinkle with vinegar, if desired. Make 6 servings.
