1 lb Dried black beans, 1 sm Sweet green bell pepper,
-washed and picked over -cored, seeded and
1 lg Bay leaf (do not crumble) -finely chopped
6 Cloves garlic (large), 1 tb Ground cumin (OR to taste)
-finely chopped 1 1/2 ts Salt (OR to taste)
1 sm Onion, finely chopped 1/4 ts Ground black pepper
Combine the beans with the bay leaf, garlic, onion, green pepper and
cumin in a large heavy saucepan. Add sufficient water to cover the
ingredients by about 2 inches. Bring to a boil over medium heat,
then reduce the heat to a gentle simmer. Partially cover the pan and
simmer gently until the beans are tender, about 1 1/2 hours. Check
the pan occasionally to be sure the beans are not boiling dry and add
a little more water, if necessary.
Drain the beans well and remove the bay leaf. Stir in the salt and
pepper and serve hot.
Makes 6 (1 cup) servings.
