2 ea Cornish hens 1 t Dried tarragon
1/3 c Vegetable oil 1/4 t Each of salt and white or
2 ea Garlic cloves, crushed -black pepper
Juice of 1 lemon
Preheat oven to 375F. Split hens in half lengthwise. Place hens,
skin side up, on a larg baking sheet with shallow sides. In a small
bowl, whisk remaining ingredients togethers. Generously baste hens
with mixture. Roast, uncovered, in centre of preheated oven for 40-45
minutes, basting frequently with oil mixture. Serves 2-4. Origin:
