2 lb Ground turkey
1 cn Mushrooms -- drained
1/2 c Celery -- chopped
1/2 c Carrots -- shredded
1 c Onion -- chopped
1/2 c Butter
2 c Sour cream
1/4 c Soy sauce
2 ts Salt
1/4 ts Pepper
6 c Cooked wild rice
1/2 c Almond slivers
Brown turkey, set aside. Saute mushrooms, celery, carrots and onions
in butter 5-10 minutes. Combine sour cream, soy sauce, salt, and
pepper. Add wild rice, turkey, sauteed vegetables and almonds
(reserving a few for garnish.) Toss lightly. Place mixture in a
lightly greased 3-quart casserole. Bake at 350 degrees for about 1
hour. Stir several times during baking. Add more water if needed,
and season to taste. Garnish with reserved almonds and parsley
sprigs, if desired.
