See below ingredients and instructions of the recipe
1 tb Chinese black beans 2 lb Crab, whole
1/3 c Sake 2 Scallions
1/3 c Chicken stock ;thinly sliced
1 tb Soy sauce 1/2 bn Garlic chives
2 ts Fresh Ginger ;thinly sliced
;grated 4 tb Unsalted butter
1 tb Dark sesame oil
Mix togther beans, sake, stock,soy sauce and ginger. Set aside for at
least an hour. Heat saute pan (large enough to fit whole crab) until
very hot. Add oil and saute crab briefly to coat with oil. Transfer
apnn to oven for 10-12 minutes, until the crab is bright red. Remove
from oven and cool. Remove the top shell of the crab in one piece.
Cut into quarters. Deglaze pan with sake mixture, then add chives,
scallions and butter. Add crab and toss over medium heat until sauce
thickens and adheres to crab. Arrange quarters on serving plate,
placing top shell on top (this is suppposed to make it look like a
whole crab again).
