-------------------VEGGIE LIFE; JAN 1995------------------------
1/2 c Fresh lemon grass; chopped 1 Serrano pepper; chopped
1 sm Garlic head; peeled 7 ts Soy sauce
5 sl Fresh ginger root 1 tb Tamarind paste
2 c Scallions; chopped 4 lg Mushrooms; sliced
1 c Carrots; chopped 8 c Water
1 c Celery; chopped
1. In a large pot, combine all ingredients. Bring just to a boil,
lower the heat and simmer for 45 minutes.
2. Strain the liquid, pressing on the solids to extract as much of
the liq as possible. Discard the solids and refrigerate overnight.
Makes 6 to 7 cups.
