1 3 lb large beef tongue 6 Sprigs of parsley
1 Onion, quartered 2 Bay leaves
1 Carrot, sliced 10 Peppercorns, cracked
3 Ribs of leafy celery 1 Dried chile, optional
See about tongue. Simmer the tongue 3 hours with the seasonings.
