Cooking Preparation of the Recipe:
4 lg Chicken quarters 1 Egg, beaten
1 tb Flour 1/4 c Soft white bread crumbs
Salt and pepper to taste 1/4 c Grated cheddar cheese
1/2 ts Dry mustard 4 tb Butter
Preheat oven to 400. Coat chicken in flour seasoned with salt pepper
and dry mustard. Brush chicken with beaten egg and roll in a mixture
of bread crumbs and cheese. Place in casserole dish and dot with
small pieces of butter. Bake 40 minutes or until golden brown and
tender.
