1/4 c Butter
1 Onion, sliced
1 Chicken
1 1/2 c Water or stock
1 1/2 tb Flour
1/2 c Cream
Salt and pepper
Melt butter and in it cook onion. Cut up the chicken into serving
pieces and fry with onion for 10 minutes. Remove chicken; add flour
and blend it with butter till smooth. Add stock or water, put in
chicken and cook till tender. Add cream and seasoning just before
serving. Many of the recipes in this collection did not contain
amounts or oven temperatures. I have typed them in as they appear in
the book, typos and all.
