1 lg Chicken, cut up
1 lg Onion, chopped
2 tb Minced parsley
Thyme--fresh if available
1 lb Smoked sausage or Andouille
1 tb File powder
4 tb Cooking oil
2 qt Chicken stock, heated
2 tb Chopped green onion
Salt and pepper to taste
1 Pint of oysters
1 Clove garlic, minced
Brown chicken slowly in oil in heavy pot. Remove chicken pcs. and
saute onion until soft. Return chicken to pot with onions, cover and
cook over low heat, about 10 minutes, stirring occasionally to
prevent burning. Add heated chicken stock, parsley, green onion and
garlic. Season with thyme, salt and pepper. Cook over low heat until
chicken is tender. Add sausage and cook for 10 minutes. Add oysters
and oyster water, cook for 10 minutes longer. Skim off any excess
fat. Remove from fire and immediately add file powder, stirring while
adding. Serve over steamed rice.
