4 c Fish stock 8 oz Can crushed tomatoes,
2/3 lb Cod fillets, cut into 1" -undrained
-cubes 2 Cloves garlic, minced
6 Potatoes, cubed -Salt and pepper to taste
1 Fennel, cubed 1/2 Orange, juiced
1 Leek, white part only, 2 tb Chopped parsley
-shredded
Bring fish stock to a boil. Add remaining ingredients except orange
juice and parsley; simmer 10-12 minutes. Add orange juice; simmer 3-4
minutes more. Serve soup piping hot, sprinkled with parsley.
