1 tb Olive oil
1 c Sliced red onion
2 Garlic cloves, minced
1 c Green and yellow bell pepper
-strips
2 c Sliced mushrooms
1 tb Chopped fresh basil
-OR
2 ts Dried basil, crushed
1 3/4 c Contadina Stewed Tomatoes,
-undrained (14.5 oz can)
1/3 c Contadina Tomato Paste
-(half of a 6 oz can)
1/2 c Chicken broth
1/2 ts Salt (opt)
In large skillet, heat oil; saute onion and garlic for 1-2 minutes.
Stir in bell peppers, mushrooms, salt and basil; saute for 2 minutes.
Stir in Contadina Stewed Tomatoes and juice, tomato paste and broth;
bring to a boil and simmer for 5 minutes. Serve sauce with broiled or
grilled chicken over cooked fettuccine.
