4 oz Bacon -- cut into 1-inch -drained
-cube 3/4 ts Black pepper -- coarsely
2 tb Unsalted butter -ground
2 c Onion -- chopped Salt and pepper -- to taste
2 tb Flour 1 lg Red bell pepper -- cut into
4 c Chicken broth -1/4" diced
2 lg Potato -- cut into 1/4" 3 Green onion -- cut into 1/4"
-cubes -slices
1 c Half and half 1 tb Cilantro -- chopped
4 c Frozen corn -- cooked
Wilt the bacon in a large soup pot over low heat until fat is
rendered, about 5 minutes. Add the butter and allow it to melt. Add
the onions and wilt over low heat for 10 minutes. Add the flour and
cook, stirring, another 5 mintues. Add the broth and potatoes.
Continue cooking over medium-low heat until the potatoes are just
tender, 12 to 15 minutes. Add the half and half, corn, pepper and
salt. Cook 7 minutes, stirring occasionally. Add the bell pepper
and green onion, adjust the seasonings and cook an additional 5
minutes. Serve immediately, garnished with cilantro.
