1 c Cream-style cottage cheese 2 tb Onion -- grated
2 c Cauliflowerets -- cooked 1 1/2 tb Fresh oregano -- chopped
1 c Grated Parmesan cheese Freshly ground black pepper
2 ea Garlic cloves -- minced Whole wheat crackers
In a mixing bowl, combine cottage cheese and cauliflower. Mix until
almost smooth. Stir in Parmesan cheese, garlic, onion, oregano and
pepper. Spoon into a greased 1-qt. baking dish. Bake at 400 deg. for
20 minutes. Serve with crackers. Yield: about 3-1/2 cups
