1 1/2 ts Salt
2 c Couscous
1 sm Red onion, diced
2 sm Cucumbers, peeled if waxy,
-seeded, and diced
2 ea Ripe tomatoes, seeded and
-diced
3/4 c Currants (opt.)
1/2 c Chopped flat-leaf parsley
Couscous Dressing (separate
-recipe)
1 ea Bring water to a boil; stir
-in salt and couscous.
-Remove pan from
heat, cover, and let stand 5 minutes. Transfer couscous to a large
bowl and break up any clumps. 2. Toss couscous with remaining
